I love making roasted green beans! They’re sweet, tender, and flavorful – especially with a touch of garlic, capers, and herbs. This recipe is super easy, too.

Oven roasted green beans are a delicious side dish—sweet, tender, and so easy to make! Roasting might be my favorite way to cook fresh green beans. If you’ve never tried roasting them, you should!

I love keeping it simple with just oil, salt, and pepper. But if you’re feeling adventurous, add garlic and capers for a burst of flavor.

How to Roast Green Beans

  1. Trim your fresh green beans, then toss them with oil, salt, and pepper. Spread them out on a baking sheet in a single layer. (Crowding will make them steam, not roast!)
  2. Pop them in a 425° F oven until they’re tender and a little wrinkly (10 to 15 minutes).
  3. While they roast, mix up some minced garlic and capers. Toss that with your hot green beans and roast for a few minutes more.
  4. Finish with a sprinkle of fresh dill. Enjoy!

How Long to Roast Green Beans

High-temperature roasting cooks green beans quickly and gives them those delicious blistered spots. At 425°F, they’re perfect in just 10-15 minutes!

Need to roast at a lower temp? No problem! Here’s your guide:

  • 350°F: 20-25 minutes
  • 375°F: 15-20 minutes
  • 400°F: 15-20 minutes
  • 425°F: 15 minutes
  • 450°F: 10 minutes

What to Serve With Roasted Green Beans

I love these beans with creamy mashed potatoes and rich brown gravy. They’re also fantastic alongside pan-seared skillet pork chops with their crispy, golden crust.

You Will Need

Basic Roasted Green Beans

1 pound fresh green beans, stem ends snapped off

1 tablespoon olive oil

1/4 teaspoon fine sea salt

1/4 teaspoon fresh ground black pepper


Garlic Caper Beans (Optional)

2 tablespoons drained capers, roughly chopped

1 tablespoon minced garlic, 3 to 4 cloves

1 tablespoon chopped fresh dill or use 1 teaspoon dried dill

Directions

    1Heat the oven to 425°F (220°F). Line a baking sheet with parchment paper or a silicone baking mat — lining the pan is optional but helps with cleanup.

    2Toss the green beans with the oil, salt, and black pepper in a large bowl.

    3Add the seasoned beans to the baking sheet. Spread them out into one layer.

    4Roast until the green beans are tender and a little wrinkled, 10 to 15 minutes.

    5Serve or continue to the next step for the garlic herb green beans.

    6Add the garlic and capers to the roasted beans. Toss well, spread everything out into a single layer, and continue to roast for another 2 to 3 minutes so that the garlic cooks. Toss well, and then serve with the dill sprinkled over the top.

  • Dill Substitute: Any fine herb can be used to substitute the dill. Try basil, parsley, cilantro or tarragon (use about half the amount of tarragon since it has a stronger flavor).
