How to Make Avocado Pasta
What I love about this recipe is that we can make the creamy avocado sauce while our pasta cooks. This recipe goes FAST.
Cook your pasta. Use well-salted water and follow your pasta’s package directions. While it cooks, you’ll prep the sauce.
Mash the avocado. Use a fork to mash a ripe avocado in a bowl until creamy. (You can use a food processor for extra smoothness.) Check out our tips for picking the perfect avocado.
Add flavor. Stir in grated garlic (a microplane is best), lemon or lime juice, salt, and pepper. Some of our readers were skeptical, calling this guacamole pasta, but everyone returned to tell us they LOVED it.
Create the sauce. Add a splash of hot pasta water to thin the avocado mixture to your desired consistency. This starchy water thins our sauce nicely and helps it stick to the pasta.
Toss in the pasta, green onion, and tomatoes. Give everything a really good toss in the avocado sauce, adding a little more pasta water if necessary.

You Will Need
8 ounces dry pasta
1 large ripe avocado
1 medium tomato, diced
1 green onion, finely sliced
1/4 teaspoon finely grated garlic
Juice from a quarter of a lemon
Salt and fresh ground pepper, to taste
Directions
1Bring a pot of salted water to a boil. Cook your pasta following the package instructions. Reserve 1/2 cup of hot pasta water before draining the pasta.
2While the pasta cooks, mash the avocado in a large bowl. Stir in garlic, lemon juice, salt, and pepper.
3Add 1/4 cup of the reserved pasta water to the avocado mixture and stir.
4Add the cooked pasta, tomatoes, and green onion to the bowl. Toss everything together until the sauce evenly coats the pasta. Add a little more pasta water to thin out the sauce if needed.
